Strawberry cheesecake - Made Monday

Strawberry cheesecake

Base
½ cup Made Monday Signature Vanilla Crème Overnight Oats (50g)
½ cup milk of choice (125ml)
1 tbsp cream cheese (20g)
lemon juice + lemon zest, to taste

Toppings
¼ cup strawberries, sliced + extra to serve
1-2 squares white chocolate (10g)
1-2 tbsp coconut yoghurt (20g)
½ lotus biscoff, crushed (optional)

Method:

  1. Add Made Monday Overnights Oats, milk, cream cheese and lemon to a bowl or container, mix to combine.
  2. Slide the strawberries down the side of the jar or mix them through the oat mixture. Place in the fridge for 10 minutes or until thickened
  3. For the chocolate ganache, place the white chocolate and coconut yoghurt in a small microwave safe bowl. Microwave in 20 second intervals until melted. Mix until smooth then spread the chocolate ganache over the oats.
  4. Place in the fridge for 2 hours or overnight to set.
  5. Optional to decorate with crushed biscuits and extra strawberries to serve.
