Prioritising healthy eating while juggling work, uni and kids can be tricky. Noa and Miranda have put together their fave high protein recipes you’ll actually enjoy eating!
Made Monday is about showing people that healthy doesn’t have to mean boring. We want to help people by creating products and recipes that are both tasty and nutritious, save time and most of all, cut through the overwhelming bs in the health food market.
Vanilla Berry Overnight Oats
Serves: 1
Ingredients:
Base
½ cup Made Monday Signature Vanilla Crème Overnight Oats (50g)
½ cup milk of choice (125ml)
⅓ cup yoghurt
¼ cup berry jam/compote (recipe below)
Jam
1 cup berries (250g)
1 tbsp chia seeds (15g)
1-2 tbsp granulated sweetener, to taste
1 tsp lemon juice
Method:
- Add Made Monday Overnights Oats and milk to a bowl or container, mix to combine. Place in the fridge for 10 minutes or until thickened.
- For the jam, add the berries, sweetener and lemon juice to a saucepan or microwave safe bowl and heat until softened. Roughly mash with a fork then stir in the chia seeds and set aside to cool and thicken slightly (the jam will continue to thicken in the fridge).
- Add a layer of yoghurt over the oat mixture then top with the berry jam (optional to split the toppings into two layers). Place in the fridge for 2 hours or overnight to set.
- Optional to decorate with crushed biscuits and extra berries to serve.
Store leftover jam in the fridge for up to a week.
Italian Style Deli Sandwich
Serves: 1
Ingredients:
90g ciabatta bread
1 tbs basil pesto
30g mortadella or prosciutto, sliced
25g burrata or mozzarella, sliced
½ cup rocket (15g)
½ cup cherry tomatoes
1-2 tsp honey
¼ tsp chili flakes
Salt and pepper, to taste
Method:
- Drizzle the cherry tomatoes with olive oil and season with salt and pepper. Bake or air-fry for 10 minutes until the tomatoes have blistered.
- Slice the ciabatta bread in half horizontally. Spread the basil pesto evenly on the insides of both slices of bread.
- Add the mortadella, mozzarella and rocket. Top with roasted tomatoes and a drizzle of honey.
- Season with chilli flakes, salt and pepper, close the sandwich and slice in half to serve.
Cookie Dough Dip with Apple Slices
Serves: 1
Ingredients:
1 apple, sliced
2/3 cup Greek yoghurt (160g)
1 tbsp peanut butter (20g)
1 tbs vanilla protein powder, optional (10g)
1 tsp maple syrup or honey, optional (5g)
1 tbsp choc chips, optional
Method:
- Add the yoghurt, peanut butter, protein powder and maple syrup to a bowl and mix until smooth. Stir in the chocolate chips.
- Serve with sliced apple or your favourite fruit.
Additional Snack
1 almond milk latte & 1-2 cups air-popped popcorn or fresh fruit
Sweet Potato Burrito Bowl
Serves: 4
Ingredients:
2 large sweet potatoes
600g extra lean beef mince
2 tsp extra virgin olive oil
1 packet taco seasoning (30g)
To serve:
2 cups lettuce, chopped
3 tomatoes, diced
1/3 cup red onion, diced
1 avocado, mashed
4 tbs light sour cream or greek yoghurt
80g light cheese, grated
Method:
1. Dice the potatoes into small cubes and add to a large bowl, drizzle with 1 tsp olive oil and 1 tbs taco seasoning, mix well. Place in the air fryer for 18 minutes or until crispy. Shake the basket halfway to ensure the potatoes cook evenly.
2. Meanwhile, add the remaining olive oil to a large pan over medium-high heat, add the beef mince breaking it up with a spatula. Add the remaining taco seasoning and mix well. Optional to add a little water or stock for extra moisture. Cook for 8-10 minutes stirring frequently until browned.
3. To assemble, divide the sweet potato between bowls, top with beef mince and cheese (melt it), lettuce, tomatoes, red onion, avocado and sour cream.
