Berries & Cream - Made Monday

Berries & Cream

Base
½ cup Made Monday Signature Vanilla Crème Overnight Oats (50g)
½ cup milk of choice (125ml)
cup yoghurt (80g)
¼ cup berry jam/compote (recipe below)

Jam (makes 1 cup):
1 cup berries (250g)
1 tbsp chia seeds (15g)
1-2 tbsp granulated sweetener, to taste
1 tsp lemon juice

Method:

  1. Add Made Monday Overnights Oats and milk to a bowl or container, mix to combine. Place in the fridge for 10 minutes or until thickened.
  2. For the jam, add the berries, sweetener and lemon juice to a saucepan or microwave safe bowl and heat until softened. Roughly mash with a fork then stir in the chia seeds and set aside to cool and thicken slightly (the jam will continue to thicken in the fridge).
  3. Add a layer of yoghurt over the oat mixture then top with the berry jam (optional to split the toppings into two layers). Place in the fridge for 2 hours or overnight to set.
  4. Optional to decorate with crushed biscuits and extra berries to serve.
Store leftover jam in the fridge for up to a week.
