Biscoff Swirl Pancakes


Ingredients:

1/4 cup Made Monday Signature Vanilla Crème Overnight Oats (25g)
1/4 cup self raising flour* (35g)
1 egg
1/2 banana, mashed (50g)
⅓ cup milk of choice (80ml)

Toppings:
1 tbs biscoff spread
2-3 tbsp yoghurt, optional
Fresh fruit, sliced

Method:

  1. Add all the ingredients to a blender and blitz until smooth. Alternatively mash the banana then whisk in the remaining ingredients.
  2. Heat a lightly greased fry pan and add 2-3 tbs of batter at a time.
  3. Swirl a teaspoon of melted biscoff spread through the pancake batter and cook for 2 minutes over medium heat.
  4. When bubbles form, flip and cook for another minute or until golden. Repeat with remaining pancake mixture and biscoff spread.
  5. Top with yoghurt and fruit to serve.

*Notes: self raising flour can be replaced with 35g plain flour + 3/4 tsp baking powder.
